Ingredients

  • 2 1/2 cups SR flour
  • 1 cup Caster sugar
  • 1 tsp Baking powder
  • 1/2 cup vegetable oil
  • 1/2 cup milk
  • 1 egg
  • 1tsp vanilla extract
  • 300g blueberries

Directions

  1. Preheat oven to 180 degrees and line a 12 quantity muffin tin with patty pans.
  2. Add all dry ingredients to a large bowl, combine lightly and make a well in the centre.
  3. Then add all wet ingredients to the well and mix together until just combined (break egg up first).
  4. Then add fruit.
  5. Fill patty pans to top, then sprinkle with granulated sugar before baking.
  6. Bake in 180 degree oven for 30-35 minutes.
