Broccoli Zucchini Quiche

Ingredients

  • 3 9" pie crusts
  • 5 c chopped broccoli or 800 g
  • 3 c chopped zucchini or 1 medium
  • 1 thinly sliced onion
  • 1 leek
  • 2 cubes garlic
  • Sliced cheese
  • 5 eggs
  • 2 c milk
  • 25 g butter
  • 1 tsp salt (use more if not using cheddar cheese)
  • 1/4 tsp nutmeg
  • 1 T dried dill
  • (Can add onion soup mix)

Directions

  1. Preheat pie crusts in 350• oven. Sauté zucchini, onion, leek, and garlic. Mix remaining ingredients (set cheese aside unless it's shredded). Later half the veggies in bottom of crusts and half the liquid. Cover with a layer of cheese. Pour remaining veggies and liquid on top. Bake on 350• for 1 hour.
