Butternut Squash & Kale Beef Stew

Ingredients

  • 2 tbsp bacon fat, or cooking oil of choice
  • 2 lb stew beef, 1″ cubed
  • 1 onion, roughly chopped
  • 4 garlic cloves, minced
  • 1 1/2 tbsp fresh sage, minced
  • 1/2 tsp smoked paprika
  • 1 small butternut squash, cubed (about 4 cups)
  •  16oz frozen, chopped kale (or one bunch fresh)
  • 4 cups beef stock, preferably homemade
  • salt and pepper
