2. Sauté pancetta or bacon on medium heat slowly until crispy. Move to large bowl when complete.
3. Beat eggs and mix in half of the cheese
4. Cook pasta al dente
5. Toss pasta with pancetta. Move pasta to bowl quickly, let it be dripping wet. Pasta should be hot enough to lightly cook the egg mixture from the next step but not too hot that it curdles the egg. This is tricky.
6. Add beaten egg mixture to pasta.
Salt and pepper to taste.
Note: Add a little pasta water, if necessary, to prevent pasta from drying out.
