Carrot Cake

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs slightly beaten
  • 2 1/2 cups large shredded carrots
  • 3/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 1/2 cup canola oil or vegetable oil
  • 1 tsp vanilla
  • Frosting:
  • 8 oz. cream cheese, softened
  • 1/2 cup butter, softened
  • 2-3 cups powdered sugar
  • 1 tsp vanilla
  • 1/2 lemon juice

Directions

  1. Preheat oven to 350 degrees.
  2. Grease 9×13 baking pan.
  3. combine flour, baking powder, baking soda, cinnamon and nutmeg.
  4. combine eggs, brown sugar, white sugar, oil and vanilla. Then add carrots.
  5. Add your dry ingredients to your wet ingredients and mix together. Do not overmix.
  6. Bake for 20-25 minutes. when a toothpick comes out clean when poked in the center of the cake.
  7. cool completely before frosting.
  8. Frosting: mix ingredients till smooth
