  • 2 1/2 raw cashews, soaked overnight, drained & rinsed
  • 1/2 cup nut milk
  • 3/4 cup honey (a little less)
  • 3 Tbsp lemon juice
  • 1 tsp vanilla
  • 1/2 tsp salt

Directions

  1. Use cheesecake pan or pie dish.
  2. Once crust has cooled. Blend cheesecake ingredients together in the blender until smooth.
  3. Pour in pan over crust.
  4. Place in the freezer for a few hours until firm.
  5. Slice and add favorite toppings. Keep in the freezer.
