Directions

  1. Wash cherries thoroughly, dry
  2. Rub basil leaves with salt until very soft
  3. Cover base of container with a layer of salt
  4. Add cherries and cover with salt and soft basil
  5. Add a splash of rum
  6. Weigh down the cherries and allow to ferment for 2-3 weeks, 27 c
  7. * turn the cherries so that they have equal contact with the salt
