Chicken, Broccoli, Quinoa Casserole

Ingredients

  • 1 cup quinoa
  • 1 1/2 pounds or 3 large boneless, skinless chicken breasts
  • salt and pepper for seasoning
  • 10 3/4 ounce cream of mushroom
  • 10 3/4 ounce cream of chicken
  • 16 ounce bag frozen broccoli florets
  • 1 cup chicken broth
  • 1 1/2 cups shredded mild cheddar cheese

Directions

  1. Turn slow cooker to low and place quinoa down in the bottom.
  2. Top with chicken breasts and then season them with salt and pepper.
  3. Add the rest of the ingredients except for the cheese.
  4. Cook on low for 5 hours and then add cheese. Stir and cook for an additional 30 minutes.
