Chicken Cacciatori

Ingredients

  • 2 large boneless skinless chicken breasts (cut in half)
  • 28 oz crushed tomatoes
  • 3/4 cup chicken broth
  • 6 baby carrots (minced)
  • 2 tbsp minced garlic
  • 2 large onions, thickly sliced
  • 1 bay leaf
  • 1 tsp red pepper flakes
  • Coconut oil

Directions

  1. Using saute function, brown the 4 pieces of chicken on both sides
  2. Once brown, remove and set aside
  3. Add garlic, red peppers, and carrots, and cook for a couple of minutes until fragrant
  4. Deglaze using some of the broth
  5. Add onions, chicken, bayleaves, tomatos and remaining broth
  6. HP for 12 minutes
  7. NPR
