  • 2 medium onion, chopped
  • 3-4 cloves garlic, chopped
  • 1 bunch cilantro, chopped (stalks and leaves separated, stalks reserved)
  • 1 medium butternut squash, diced
  • 1 can chickpeas
  • 2 T. Patak's Korma Paste
  • 1 can Coconut Milk
  • 1 cup water
  • 100g spinach
  • 1 cup frozen peas
  • Salt
  • 2 cups basmati rice
