Procedure:
1. Start by seasoning the beef with salt and pepper. Next, coat the beef with flour and place in a preheated pan with olive oil in batches to ensure a good sear. Once seared, in a preheated skillet on medium heat, sear the beef in two batches and remove for later use.
2. In a small pot, add the chile pods, onion and cover with water simmering for a few minutes. Place it all in a blender and blend until smooth. Strain the mixture into the same skillet and cook for a couple minutes before adding the beef, add the garlic, oregano and cumin and rinse blender and add the water to the beef as well. Let it come to a simmer and place a lid on it and simmer for about 1-1/2 hours or until tender checking periodically to ensure it doesn't burn on the bottom by stirring occasionally and check if it needs water.
Season to taste and serve with your favorite sides. Enjoy!
