Chipotle Chicken Chowder

Ingredients

  • 12 oz evaporated milk (non fat)
  • 1 tsp cumin
  • 1 tbsp olive oil
  • 8 oz chopped chicken meat
  • 14oz chicken broth
  • 3/4 cup chopped onion
  • 3/4 cup chopped green pepper
  • 3/4 cup chopped red pepper
  • 2 chipotle peppers in adobo sauce
  • 4oz water
  • 36g cornstarch

Directions

  1. Sauté pepper, onion, coming 3 min
  2. Add chicken broth, water, chipotle peppers
  3. Bring to boil
  4. Reduce heat
  5. Simmer covered 8 min
  6. Stir in chicken
  7. Gradually stir in 1/3 cup milk into cornstarch
  8. Stir milk mix into broth mix
  9. Add remaining milk
  10. Cook and stir until thick
  11. Cook two minutes more
  12. Garnish with sliced green onions
