To make mango salsa, in a medium bowl combine mango, pepper, onion, jalapeño, lime juice, olive oil, cilantro and salt. Stir to coat and combine well. Let the salsa sit so the favors can develop while you prepare the pork chops.
In a small bowl combine the chipotle chili powder, brown sugar, cumin, garlic powder, and salt. Sprinkle this all over the pork chops, pressing the spice rub in with fingers.
In a large skillet heat the canola oil over medium high heat. Add the pork and cook, covered without moving them, until a dark golden crust forms on the bottom of each, 2-3 minutes. Flip the chops and cook covered, 2-3 minutes more. Remove the pan from the heat,flip the chops again and let rest, covered in the pan for 2 minutes. Remove from the pan, tent with foil, and let rest for 3 minutes.
Serve the pork chops with the mango salsa alongside.
