Chocolate-cream Cheese Cupcakes

Ingredients

  • 8 oz. cream cheese
  • 1/3 cup sugar
  • 1 egg
  • 1/8 tsp. salt
  • 1 6-oz. pkg. chocolate chips
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 cup sugar
  • 1/4 cup cocoa
  • 1-1/2 cups flour
  • 1 cup water
  • 1/3 cup oil
  • 1 Tbsp. vinegar
  • 1 tsp. vanilla

Directions

  1. In a small bowl, mix together cream cheese, sugar, egg and 1/8 tsp salt. Stir in chocolate chips.
  2. In larger bowl, put soda, 1/2 tsp. salt, sugar, cocoa and flour. Measure water, oil, vinegar and vanilla together. Stir and mix with flour mixture. Divide chocolate mixture evenly in cupcake pans (for 18 cupcakes). Then spoon cream mixture on top. Top with candied cherry if desired. (Since these cupcakes are not frosted, makes them more attractive.
  3. Bake at 350 degrees for 30 minutes.
