Chocolate Peanut Freeze

Ingredients

  • 2 cups powder sugar
  • 1 can evaporated milk (12 oz)
  • 1 cup butter, divided
  • 2/3 cup semisweet chocolate chips
  • 1 package (14 oz) cream filled chocolate cookies
  • 1/2 gallon vanilla ice cream, soft
  • 1 1/2 cups salted peanuts, coarsely chopped

Directions

  1. Combine the powder sugar, milk, 1/2 cup butter, and chocolate chips in a saucepan.
  2. Bring to a boil, stir constantly for 8 minutes or until slightly thickened.
  3. Refrigerate until cool.
  4. In a food processor cover and process cookies until finely crushed.
  5. In a large bowl melt the remaining butter and stir in crushed cookies.
  6. Press into a 13x9x2 pan. Refrigerate until firm.
  7. Spread ice cream over the crust and freeze.
  8. Stir peanuts into the chilled chocolate mixture and spread over the ice cream.
  9. Cover and freeze 3-4 hours. Let stand 5 min before serving.
