Coconut and Lime Frosted Soft Sugar Cookies

Ingredients

• ⅔ cup granulated sugar plus 3 tablespoons for pressing cookie dough balls
• ⅓ cup powdered sugar
• ½ cup butter at room temperature
• ⅓ cup vegetable oil
• 1 ½ tablespoons freshly squeezed lime juice about 2 ½ limes plus 1 lime for garnish
• 1 teaspoon lime zest
• 1 large egg
• 3 cups all-purpose flour
• ½ teaspoon baking soda
• ½ teaspoon cream of tartar
• ½ teaspoon salt
• For the Frosting
• ¼ cup butter
• 4 tablespoons cream cheese
• 3 teaspoons coconut extract
• 2 cups powdered sugar
• 1-2 tablespoons half and half or heavy cream
• ½ cup shredded sweetened coconut
• Lime slivers and coarse sugar crystals for garnish
