Coconut Milk Dumpling Bake

Ingredients

  • 1 bag frozen dumplings or potstickers (12–16 oz)
  • (pork, chicken, veggie, or shrimp)
  • 1 can full-fat coconut milk (13.5 oz)
  • 2–3 cups greens
  • (spinach, baby bok choy, or napa cabbage)
  • 2–3 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1–2 tsp ginger (fresh or paste)
  • 1–2 cloves garlic (or paste)
  • Optional heat: chili crisp, red pepper flakes, sambal

Directions

  1. Preheat oven to 375°F (190°C)
  2. Place frozen dumplings in a single layer in a baking dish or shallow pan
  3. Whisk coconut milk, soy sauce, sesame oil, ginger, garlic, and chili
  4. Pour sauce over dumplings
  5. Tuck greens around and lightly over dumplings
  6. Cover tightly with foil
  7. Bake 25–30 minutes
  8. Uncover and bake 10–15 minutes more until bubbling and dumplings are tender
  9. Finish with scallions, cilantro, or lime if desired.
