Ingredients

  • Batter:
  • 1 C flour
  • 1tsp baking powder
  • Dash salt
  • 1/2tsp pepper
  • 1can beer
  • 2lbs large shrimp
  • Flour for dredging
  • 10 oz bag (300g) coconut
  • Oil
  • Sauce:
  • 1jar orange marmalade
  • 4tsp Dijon mustard

Directions

  1. Sift batter ingredients, add beer, let sit.
  2. Wash shrimp, pat dr with paper towel. Dredge shrimp in flour, dip in batter, roll in coconut, fry till golden. Drain on paper towel.
