Cornbread

Ingredients

  • 1 cup (250ml) maize meal
  • 1/4 cup (60ml) flour
  • 1 tsp baking powder
  • Pinch of salt and freshly ground pepper
  • 1/2 tsp cayenne pepper
  • Pinch of chilli (optional)
  • 3 eggs
  • 1/2 cup (125ml) milk
  • 2 tbsp vegetable oil
  • 4 spring onions, Finley sliced
  • 1 can sweet corn
  • 1 cup (250ml) cheddar cheese, grated

Directions

  1. Preheat oven to 180 degrees C.
  2. Place maize meal, flour, pepper, baking powder, salt, freshly ground pepper, cayenne pepper and chilli into a bowl and mix well.
  3. Whisk together eggs, milk and oil and add to the dry ingredients.
  4. Stir in spring onions, sweet Corn, cheddar cheese and pour batter into a lightly greased loaf tin.
  5. Bake in the oven for 30-40 minutes or until risen and lightly golden brown.
  6. Serve warm with butter.
