Cottage Cheese Blueberry Lemon Loaf

Ingredients

  • - 1 cup cottage cheese
  • - 3 large eggs
  • - 1/3 cup maple syrup or honey
  • - 1 tablespoon lemon zest
  • - 2 tablespoons fresh lemon juice
  • - 1 teaspoon vanilla extract
  • - 1 1/2 cups almond flour
  • - 1 teaspoon baking powder
  • - 1/4 teaspoon salt
  • - 3/4 cup blueberries, fresh or frozen
  • - 1 tablespoon almond flour, for coating blueberries

Directions

  1. 1. Preheat your steamer and prepare a baking dish that fits inside it.
  2. 2. Mix the cottage cheese, eggs, maple syrup or honey, lemon zest, lemon juice, and vanilla extract.
  3. 3. In another bowl, combine almond flour, baking powder, and salt.
  4. 4. Combine the dry ingredients with the wet ingredients and gently fold in the blueberries coated with almond flour.
  5. 5. Pour the mixture into the prepared baking dish and steam for about 35-40 minutes or until a toothpick comes out clean.
  6. 6. Let it cool before slicing and serving.
  7. This recipe uses steam cooking and almond flour to create a flourless blueberry bread with a lovely texture. Enjoy!
