Cottage Cheese Chips

Ingredients

  • 1 cup cottage cheese full-fat or low-fat both work
  • 1 large egg
  • ½ cup shredded cheddar cheese or parmesan/mozzarella
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • Salt & black pepper to taste
  • Optional: dried parsley chili flakes, everything bagel seasoning

Directions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

Blend the mixture:

  1. Add cottage cheese, egg, cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper to a blender.
  2. Blend until mostly smooth but still slightly textured.

Scoop into chips:

  1. Use a spoon to drop small 1–2 tablespoon-sized mounds onto the baking sheet.
  2. Flatten each mound into a thin circle — the thinner they are, the crispier they get.

Bake:

  1. Place the tray in the oven and bake for 20–30 minutes, depending on how crispy you want them.
  2. For softer, chewy chips: ~20 minutes
  3. For extra crispy, browned chips: 28–30 minutes

Cool completely:

  1. Let them cool on the tray for 10 minutes. They crisp up even more as they cool.
