Ingredients

  • 1/2cup red wine port works well1 cup dried cranberries
  • 32 ops fat free low sodium chicken broth
  • 2cups uncooked couscous
  • 1 cup chopped pecans toasted

Directions

  1. Microwave wine at high for 1 minute, add cranberries and let stand 15 minutes.
  2. Bring chicken broth to boil in a medium sauce pan. Stir in couscous and cranberry mixture. Cover and remove from heat, let stand 10 minutes. Fluff couscous with a fork. Sprinkle with pecans, and serve with immediately.
