Crispy Chicken Paremesan

Ingredients

  • 2 boneless skinless chicken breasts. 6oz each
  • Breading
  • 1 cup bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1/2 tablespoon dried italian seasoning
  • 2 egg whites
  • 1/2 tablespoon olive oil
  • Salt and Pepper
  • Sauce
  • 1 and 1/2 tablespoon butter
  • 2 tablespoons small capers
  • 1/2 tablespoon Dijon mustard
  • Juice of one lemon
  • 2 tablespoons fresh parsley roughly chopped

Directions

  1. Pound the chicken to 1/4 inch thick
  2. Combine the crumbs, italian seasoning and cheese in large platter
  3. In second bowl, add lightly beaten egg waits
  4. Season the chicken with salt and pepper
  5. Dredge chicken in egg whites
  6. Dredge in bread crumbs, being sure to press firmly and evenly coated
  7. Heat oil on medium (stainless steel sauté pan or cast iron skillet)
  8. Add breast and cook for 3-4 minutes, flip and cook for 2-3 more
  9. Transfer to a platter to rest
  10. While the pan is still not add butter to melt, tress about a minute
  11. Add capers, Dijon mustard, lemon juice
  12. Use a wooden spoon to stir up the bits
  13. Serve the breasts with the sauce on top with chopped parsley
  14. Served with side of spinach sautéed with garlic and dried chilis
