Crockpot Chicken Lettuce Wraps

Ingredients

  • For the filling:
  • 2-3 boneless skinless chicken breasts
  • 1 medium onion thinly sliced
  • 1 bell pepper thinly sliced
  • 1 bottle hoison sauce
  • 2 Tablespoons soy sauce
  • 3 Tablespoons water
  • 2 Tablespoons minced gincer
  • For the Wraps:
  • 1 cup cooked jasmine rice
  • 2 green onions thinly sliced
  • 1 bag broccoli slaw (found next to the salads in a bag)
  • 1 head butter lettuce
  • Ranch dressing (optional)

Directions

  1. 1) Pour the chicken, onion, and red peppers, chicken, hoison sauce, soy sauce, water and ginger in a freezer gallon bag. Place in freezer flat.
  2. 2) The night before remove bag from freezer and place in fridge to defrost. Pour all in crockpot in the morning and cook on low for 6-8 hours.
  3. 3) Before eating shred chicken
  4. 4) Wash and pat dry leaves of lettuce
  5. 5) Layer the wrap with rice, chicken, broccoli slaw, green onions, and ranch. Fold like a taco and enjoy!
