Crockpot Lasagna Soup

Ingredients

  • - 1.5 Ib ground beef
  • - 1 medium yellow onion
  • - 1 red bell pepper
  • - 24 oz jar marinara (Rao's is my fav!)
  • - 14 oz can diced fire roasted tomatoes
  • - 4 cups low-sodium chicken stock
  • - 1/2 - 3/4 package lasagna noodles
  • - 2 cloves garlic
  • - 3 tsp Italian seasoning
  • - Salt & pepper to taste
  • - Parmesan, mozzarella, & ricotta for topping

Directions

Cook ground beef on the stovetop until broken up & slightly browned (about 5 minutes). While beef is cooking, chop the red bell pepper & onion. Add ground beef, red pepper, garlic, onion, marinara, fire-roasted tomatoes, chicken broth, and seasonings to the crockpot.
Cook on high for ~4 hours (or low for 8). With 30 minutes left, add lasagna noodles for remainder of cooking time. Serve with desired cheese for topping & enjoy!
