Cucumber Feta Rolls

Ingredients

  • 2 Cucumbers
  • 6 Ounces of Crumbled Feta Cheese
  • 3 Tablespoons of Greek Yogurt
  • 2 1/2 - 3 1/2 Tbsp diced Bell Pepper
  • 8-12 pitted Kalamata Olives, chopped
  • 1 Tbsp chopped Dill
  • 2 tsp of Lemon Juice
  • Pinch of pepper

Directions

  1. 1) Thinly slice the cucumbers longways.
  2. 2) Add the feta and yogurt to w mixing bowl.
  3. 3) Mash to combine using a fork
  4. 4) Add the bell peppers, fill, olives, lemon, and pepper.
  5. 5) Place 1-2 tsp of mixture to the end of one of a cucumber strip and roll up.
  6. 6) Secure with a toothpick.
  7. 7) Repeat with remaining strips.
  8. 8) If not serving immediately, chill until ready to serve.
