Dad's Chili

Ingredients

  • 2 Lbs Chili Ground Beef
  • 1 Onion
  • 2 12 oz cans San Marzano Tomatoes (Hunts, Cento, product of Italy Whole or Chopped/Diced)
  • 1 8oz can of tomatoe sauce
  • 4 - 4 1/2 tsp chili powder
  • 1/4 - 1/2 tsp cayenne pepper
  • 1/4 - 1/2 tsp paprika
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/4 tsp garlic powder or 3 cloves of fresh garlic.
  • Pinch celery seed
  • 1-2 bay leaves
  • 1 can kidney beans liquid but 1/2 can to whole can of 15 1/2 oz
  • 1/2 - 1 tblsp sugar
  • 1/2 - 1 bottle dark beer
  • Shredded Cheddar Cheese
  • Crackers
  • Butter

Directions

  1. Chop onion and garlic and sauté on low heat till translucent 3 mins.
  2. Brown hamburger 1 lb at a time
  3. Add sautéed onions and cook for a couple mins.
  4. Add rest of ingredients except for beans and 1/2 can of beer, combine and bring to boil.
  5. Simmer uncovered for 1hr 15 mins
  6. Add beans, beer, and 1 tblsp butter and simmer for 15 mins
  7. Add more spices if needed
  8. Top off with cheese and crackers
