Danish Smoerrebroed (Curry Heerings)

Ingredients

  • 1 slice of rye bread, cut into 2 piecec
  • 15 gram butter, soft
  • 1 thick marinated heering, matured in old fashioned way, cut into 6 pieces
  • 2 tbsp. mayonaise
  • 1 tbsp. creme fraiche
  • 1 shallot onion, finely chopped
  • 1 tsp. curry powder
  • 1/2 tsp, turmeric powder
  • 1/2 tsp. mild paprika powder
  • A pinch of black pepper
  • 1 small apple, Cox Orange or Holsteiner Cox, cut in small cubes
  • A small handful of water cress, for taste and decoration

Directions

  1. Butter the bread
  2. Mix mayonise, creme fraiche, chopped onion, curry powder, turmeric powder, paprika powder and black pepper together with half the amount of apple cubes.
  3. Turn around the 6 pieces of the marinated heering.
  4. Put 3 pieces on each piece of rye bread.
  5. Decorate with the rest of the apple cubes and use the water cress as topping.
  6. It looks good and taste even better.
