Dumpling One Pan Bake

Ingredients

  • 20 frozen dumplings
  • 2 bok choy
  • 1 zucchini
  • Sauce ingredients -
  • 400mL coconut milk
  • 2-3T red curry paste
  • 2T soy sauce
  • 1T rice wine vinegar
  • 1T honey or sugar
  • 1t sesame oil
  • 1-2 cloves garlic, grated
  • 1small cube ginger, grated or teaspoon bottled
  • Garnish - sesame seed, coriander,chilli crisp oil

Directions

  1. In a baking dish, 30 x 20cm, pour in all the sauce ingredients.
  2. Mix thoroughly.
  3. Chop bok choy and zucchini and add to sauce. Stir well.
  4. Place dumplings so they are not overlapping but press into sauce.
  5. Bake for 20 minutes, covered with foil.
  6. Remove foil and bake 5-10 min.
  7. Add garnish and serve with rice.
