Eloise’s Butterscotch Pie

Ingredients

  • 1 9inch pie crust
  • Baked pie crust
  • 1 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 2/3 cups milk
  • 1/3 cup butter
  • 3 egg yolk
  • 1 1/2 teaspoon vanilla

Directions

  1. Mix in sauce pan brown sugar, cornstarch, salt.
  2. Gradually stir in water, milk
  3. Add butter
  4. Cook over medium heat, stirring constantly till mixture thickens and boils. Boil one minute. Remove from heat.
  5. Gradually stir half of hot mixture into 3 egg yolks, slightly beaten. Then, blend into hot mixture. Boil one minute, stirring constantly. Remove from heat. Blend in vanilla.
  6. Pour into pie crust and apply meringue.... brown in oven.
