  • Levain (Start the night before):
  • 30 grams of Lievito Madre (Or other sourdough starter)
  • 130 milliliters/grams of filtered water (100°F)
  • 120 grams of Flour (I use All Purpose Einkorn Flour. See notes)
  • The Main Dough (the next day):
  • All of the Levain
  • 664 grams of Bread Flour (See notes)
  • 393 milliliters of Filtered Water (100°F)
  • 12 grams of Salt
