Fish & Salsa Salad

Ingredients

  • 5ml olive oil
  • 150g white fish, basa
  • 1g pinch pepper
  • 72g lettuce, shredded
  • 75g cherry tomatoes, halved
  • 116g cucumber, unpeeled and chopped
  • 80g red capsicum, chopped
  • 44g tomato salsa

Directions

Heat the oil in a large non-stick frying pan over medium to high heat. Season the fish with pepper.

Place the fish into the frying pan and cook for 3 to 4 minutes each side or until fully cooked through.

Add lettuce to a serving bowl. Top with warm fish, tomatoes, cucumber, capsicum and salsa.

TIP: feel free to sprinkle over coriander if you have some available.
