Fresh Plum Muffins

Ingredients

  • 3/4 cup Greek yogurt
  • 1/2 cup brown sugar
  • 1/4 cup olive oil
  • 1 egg, beaten
  • 1tsp vanilla
  • 1 cup oatmeal
  • 3/4 cup whole wheat flour
  • 1/3 cup wheat germ
  • 1 Tb baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1tsp ground cardamom
  • 1-2 Tb poppy seeds or chopped nuts
  • 2 cups fresh plums, chopped

Directions

  1. Preheat oven to 400’. Prepare muffin cups.
  2. In a large bowl, mix together yogurt, brown sugar, olive oil, egg and vanilla. Add in oatmeal and stir well.
  3. Combine dry ingredients and add to bowl. Stir until just combined. Fold in plums.
  4. Spoon into muffin cups. Bake for 20-22 minutes.
