Ingredients

  • 5 eggs
  • 1/2 cup low-fat milk
  • 1/2 cup self-raising flour
  • 1/2 cup low-fat tasty cheese
  • 1/2 cup bacon diced or ham or salmon
  • 2 cups mixed vegetables diced
  • 1/4 cup basil shredded
  • 1 pinch salt and pepper to taste

Directions

  1. Peeheat oven to 180°
  2. Whisk eggs with milk in a large bowl. Add self-raising flour to the mixture, then add mixed vegetables, bacon and herbs.
  3. Season with salt and pepper.
  4. Mix ingredients until combined and pour into prepared lined and greased pan.
  5. Bake for 30-35 minutes until golden and firm.
  6. Cool in pan. Cut into slices and serve with salad.
