#Ginger And Scallion Fish

Ingredients

  • MARINADE
  • 8 to 12 oz firm fish fillet sliced into thin pieces
  • 4 ginger slices
  • 1 green onion (white part only)
  • 1/4 tsp white pepper
  • 1 tsp Chinese cooking wine
  • Salt to taste
  • 2 tsp corn starch
  • SAUCE
  • 4 slices ginger
  • 2 green onions (white part)
  • 2 cloves garlic sliced
  • 1 1/2 tsp Szechuan peppercorns
  • 3/4 cup chicken stock
  • MAKE DISH
  • Green from scallions
  • White pepper
  • Slurry of 1 Tbsp cornstarch and 1 tbsp water

Directions

  1. Combine marinade ingredients to the fish saving the corn starch till last. Set aside for 10 minutes
  2. Add 1 Tbsp vegetable oil to medium hot wok or pan.
  3. Add the ginger, scallions, peppercorns and sauté for a minute.
  4. Add the garlic and cook til fragrant. About a minute.
  5. Add the chicken stock and a pinch of salt. Bring to simmer
  6. Add the fish and stir carefully not to break up the fish.
  7. Cook 3 minutes. Add the green parts of 2 scallions (1 inch pieces) and 1/4 tsp white pepper
  8. Check for salt. Add the slurry and stir gently. Cook 2 minutes longer or until thick and fish is done.
