Grain-Free Mixed Berry Crisp (Vegan)

Ingredients

  • 32 oz. strawberries, hulled and halved
  • 24 oz. berries, your choice (I like to use blueberries, raspberries, and blackberries)
  • 1/4 cup arrowroot starch (tapioca or corn starch will also work)
  • 3 tablespoons fresh lemon juice
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom (optional)
  • Crumble Topping:
  • 1/3 cup raw walnuts
  • 1/3 cup raw hulled sunflower seeds
  • 1/3 cup pecans
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1/2 cup coconut flour
  • 1/4 cup almond flour
  • 1/4 cup arrowroot starch (tapioca or corn starch will also work)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 3 tablespoons maple syrup or honey
  • 1/4 cup coconut oil solidified or butter, chilled and cut into pieces
  • 2 teaspoons vanilla extract
