Gran's Butternut Squash Soup

Ingredients

  • 1 medium onion
  • Half a butter stick
  • One apple medium sized
  • Butternut squash medium
  • 1 big carrot Optional or 1 celery
  • Chicken stock 32oz (or veg stock)
  • 1 teaspoon nutmeg

Directions

  1. Peel all ingredients (for butternut squash peel, or buy cubed)
  2. Core and slice (thin) apple
  3. Slice onion (thin)
  4. Cube butternut squash
  5. Slice carrot (if using)
  6. Put butter, onion and apple in pot (medium heat)
  7. Stir apple and onion until glassy/ transparent
  8. Put chicken/ veg stock, butter but squash, and carrots + 1 teaspoon of nutmeg
  9. Bring it to a boil then let it summer until soft, then turn it off and let it cool
  10. Use hand blender, taste for salt , add if needed and blend again
