Hamantashen

Ingredients

  • 2 eggs
  • 1 c sugar
  • 2 c flour
  • 1/2 c margarine
  • 1 tbspn Orange juice
  • 1 tbspn lemon juice ( optional)
  • 1 tsp b powder
  • 1 tsp vanilla
  • Pinch salt
  • 1 tsp orange zest( optional)

Directions

Filling:

  1. 1/2 lb strawberry or apricot preserves
  2. Place all ingredients in a bowl and beat together. Add a drop of juice or flour depending on consistency of dough. Roll dough into ball.
  3. Divide dough in half.
  4. On a floured surface roll each portion to about 1/8" thick. Using rnd cookie cutter cut 3 " circles.
  5. Place 1/2 tsp filling of your choice in the middle of circle.
  6. To shape into triangle lift up right and left sides, leaving the bottom down and bring both sides to meet at Center above filling.
  7. Bring top flap down to the Center to meet the two sides. Pinch edges together.
  8. Place on parchment paper and bake at 350F preheated oven for 20 - 30 min
