Healthy Pumpkin Bread

Ingredients

  • 1 cup brown sugar
  • 2 eggs
  • 1 cup pumpkin
  • 1/4 cup. canola oil
  • 1/3 cup low fat plain yogurt
  • 1 teaspoon vanilla
  • 3/4 cup whole wheat flour
  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon soda
  • 1/2 teaspoon salt

Directions

  1. Preheat oven to 350 degrees. Spray 8 1/2 x 4 1/2 loaf pan with non stick spray.
  2. In a large bowl with wire whisk, combine brown sugar, eggs, pumpkin, oil, yogurt, and vanilla. Stir to combine.
  3. In a medium bowl, combine, flours, baking powder, cinnamon, nutmeg, soda and salt. Add to pumpkin mixture, stir until just combined. Do not over mix.
  4. Pour batter into prepared pan. Bake for 45-55 minutes or until toothpick comes out clean. Invert bed onto wire rack. Cool completely.
