Ingredients

  • 6 cups chicken stock
  • Heaping .5 cup Arborio rice
  • Juice from 2 lemons
  • 3 cups shredded cooked chicken
  • 2 large eggs
  • 2 tsp Italian seasoning (lite house salad blend)
  • 6 tbsp chia seeds

Directions

  1. Put rice in the pot with stock and cook high pressure for 7 minutes. Quick release. Add chicken and spices.
  2. Meanwhile beat eggs with lemon juice until frothy. Add salt and pepper. Stir rice, stock, chicken, etc. quickly while pouring in egg mix. Quick stirring so the the eggs don’t become scrambled eggs. Don’t boil after adding egg mix just keep hot.
