#Italian Meat Sauce

Ingredients

  • 1 onion chopped
  • 2 cloves garlic chopped
  • 1 carrot diced
  • 2 stalk celery
  • -
  • 1 lbs sweet or mild Italian sausage or pork
  • 1 lbs beef ground
  • -
  • 1/2 cup white wine
  • -
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1 sprig fresh thyme
  • 1 Parmigiana rind
  • 2 bay leaf
  • Small pinch cinnamon (optional)
  • 1 tsp sugar (optional)
  • -
  • 2 - 28 oz cans San Marzano Tomatoes. Hand crushed. Depends on how thick you want the sauce
  • 1/2 can water rinsed in the tomato cans
  • Fresh Basil

Directions

  1. Course chop vegetables and place in food processor. Pulse until small pieces
  2. Add some olive oil (2 Tbsp) and meat to large dutch oven . Salt a little and Brown till liquid is almost gone. Remove meat and set aside.
  3. Sweat vegetables in dutch oven on medium heat. Stirring often
  4. Add wine and reduce
  5. Add tomatoes and water. Use immersion blender on veg and tomato mix till smooth
  6. Add basil, and spices.
  7. Add the meat back and mix.
  8. Bring to very low simmer
  9. Cook partially covered for 2 to 4 hours stirring every 15 minutes so as not to stick on bottom on lowest heat. Add more water is needed.
  10. Salt to taste
  11. Remove any thyme stems and bay leaves
