#Italian Meat Sauce
Ingredients
- 1 onion chopped
- 2 cloves garlic chopped
- 1 carrot diced
- 2 stalk celery

- 1 lbs sweet or mild Italian sausage
- 1 lbs beef ground
- -
- 1/2 cup white wine
- -
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1 sprig fresh thyme
- 1 Parmigiana rind
- 1 bay leaf

- 2 - 28 oz cans San Marzano Tomatoes. Hand crushed. Depends on how thick you want the sauce
- 1/2 can water rinsed in the tomato cans
- Fresh Basil
Directions
Course chop vegetables and place in food processor. Run until small pieces
Salt as you go.
Sweat vegetables in dutch oven on medium heat
Add meat an brown till liquid is gone
Add wine and reduce
Add immersion blended tomatoes and water, basil, and spices.
Bring to simmering
Cook on low heat uncovered for 2 to 3 hours stirring every 15 minutes
Very gentle simmer
Salt to taste
