Kalbi (Grilled Korean-Style Short Ribs)

  • 5 pound flanken-style (about 1/2-inch-thick) beef short ribs
  • 1/3 cup sake
  • 1/4 cup granulated sugar
  • 1 cup soy sauce
  • 4 scallions (white parts and 2 inches of green parts only), finely chopped (about 1/3 cup)
  • 7 large garlic cloves, finely chopped (about 1/4 cup)
  • 3 tablespoons dark brown sugar
  • 1/2 teaspoon sesame oil
  • 1 1/3 cups water
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon black pepper
