Kani Sushi

Ingredients

  • Sushi Rice
  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1/2 tsp salt
  • Crab Filling
  • 12 oz imitation crab meat
  • 1/4 cup Kewpie mayo
  • 1 tsp sesame oil
  • 5 sheets of nori
  • 1 avocado
  • Sesame seeds (optional)

Directions

  1. 1 wash sushi rice
  2. 2 cook sushi rice in rice cooker
  3. 3 add vinegar, sugar and salt into sauce pan and stir over med heat until dissolved. Let it cool
  4. 4 thaw frozen imitation crab under cool water if needed
  5. 5 shred imitation crab
  6. 6 add mayo to imitation crab and combine
  7. 7 when sushi rice is done cooking, add in vinegar mixture and mix into rice. Let rice sit and cool to dry
  8. 8 thinly slice avocado
  9. Assembly
  10. 1 grab sheet of nori and place shiny side down on sushi mat
  11. 2 spread rice thinly and evenly on nori sheet
  12. 3 place a line of imitation crab down center
  13. 4 add slices of avocado onto line of crab
  14. 5 roll sushi
  15. 6 slice into 6-8 pieces
