Heat the oil in a frying pan and add garlic, leek and mushrooms. Cook for a few minutes and set aside in a bowl.
Add the beaten eggs to the frying pan with a dash of olive oil. Add the cooked leek and mushroom mix onto one side of the eggs whilst in the frying pan.
Once the egg is cooked, flip over the other side of the egg mix to make a semi circle. Slide omelette onto a serving plate, add the rocket and serve with salt and pepper.
