Lemon Butter Chicken

Ingredients

  • 4-8 chicken thighs
  • Salt and pepper
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2-1 cup milk
  • 1/4 cup Parmesan, grated
  • Juice of 1 lemon
  • 2 cups baby spinach, chopped
  • Mushrooms (optional)

Directions

  1. Preheat 400.
  2. Season chicken with salt and pepper.
  3. Melt 2 tablespoons butter in skillet, med-high heat. Add chicken, sear both sides until golden brown. Set chicken aside.
  4. Melt remaining butter in skillet, add garlic, milk, Parmesan, lemon juice, mushrooms - stirring frequently for 1-2 minutes.
  5. Bring to boil then reduce heat and stir in spinach, simmer until wilted about 3-5 minutes.
  6. Place chicken in a baking dish, cover with sauce. Bake about 30-40 minutes.
