Ingredients
- 2 3/4 cups milk
- 16 Dutch speculaas cookies (see notes)
- 1kg fresh ricotta (see notes)
- 1 1/2 tbsp finely grated lemon rind
- 2 tbsp lemon juice
- 2/3 cup caster sugar
- 100g packet vanilla flavoured dessert mix
- 1/2 cup lemon butter, softened (see notes)
- 2 tbsp boiling water
- 1 tbsp gelatine powder
- 300ml thickened cream
- 1 tsp vanilla extract
- Lemon slices, to decorate
- Small fresh mint leaves, to decorate
