- 2 tbsp lemon zest (better if air-dried for at least 1 hour)

- A little bit over 1/8 cup of granulated sugar
- 90 to 95 g egg whites [about 3 large egg whites]
- Pinch of citric acid (optional)
- Pinch of Egg white powder (optional) (If you have this, mix it with the sugar before

- 6 tbsp heavy cream
- 1 tsp lemon zest
- 3/4 cup white chocolate, coarsely chopped
- A little over 1/2 tsp citric acid
- Pinch of salt
