Lemon Poppyseed Superfood Bars

Ingredients

  • 1.25 cup puffed amaranth (See pg 130 in her book on the show To)
  • 1 cup dried, unsweetened shredded coconut
  • 1/4 cup toasted unhulled black sesame seed (pg 77)
  • 1/4 cup toasted sunflower seeds (pg 77)
  • 1/4 cup hemp seeds (SUB: Whole flax seeds)
  • 1/4 + cup lightly toasted poppy seeds
  • 1 heaping Tbsp coconut oil
  • 1/2 cup yakon syrup
  • 1/2 cup roasted homemade almond butter or store-bought (SUB: Sunbutter, organic)
  • 1 tsp vanilla extract
  • 2 tsp lemon zest (SUB: 2 tsp lemon extract)
  • Sprinkle of fleur de sol salt
  • 1 cup toasted walnut halves, chopped (SUB: 1/2 cup raw chopped cashews)
  • 1/2 cup dried mulberries (SUB: blueberries)
