Sauté diced onion in olive oil until soft, add garlic cook until fragrant. Grate or mince carrots then add to pot, sauté until slightly soft. Add in lentils, tomato sauce, water, and oregano and bring to a boil. Reduce heat to simmer, cover and cook for about 20-30 minutes until lentils break down. Using an immersion blender, blend sauce until it's to your liking. Add salt, pepper, and honey if needed.
