Lentil Curry Sweet potato Soup
Ingredients
- 1 large sweet potato cubed
- 1 medium onion chopped
- 10 cups water
- 8 1/2 tsp bouillon
- 1/3 bag lentils
- 1 tbsp curry
- 1 cup spinach

Directions
- Cook onions in olive oil in large pot until translucent. Add water, bouillon, lentils and curry. Bring to boil. Let lentils cook 15-20 minutes. Add sweet potato. Cook 15 -20 more minutes? Add spinach at end.
